Ingredients

  • 2 large egg whites
  • 0.25 teaspoon cream of tartar
  • 1 cup granulated sugar
  • 0.33 cup water
  • 1 teaspoon vanilla extract
  • a pinch salt
  • optional food coloring

Instructions

  1. Begin by preparing a double boiler: fill a saucepan with about 1-2 inches of water and bring it to a simmer. Place a heatproof mixing bowl on top, making sure it does not touch the water.
  2. In the mixing bowl, combine the egg whites, cream of tartar, salt, and sugar.
  3. Gradually add the water to the mixture, stirring gently until combined.
  4. Place the bowl over the simmering water, and using an electric mixer, beat the mixture on high speed for about 7 minutes. The frosting will become glossy and form stiff peaks.
  5. Remove the bowl from heat carefully. Add the vanilla extract and mix gently to incorporate. If desired, add a few drops of food coloring and stir until the color is evenly distributed.
  6. Use immediately to frost your favorite cakes, cupcakes, or cookies. If the frosting is too soft, let it cool for a few minutes before applying.
