Ingredients

  • 2 medium zucchinis, sliced into ½-inch rounds
  • 1 cup breadcrumbs (preferably panko for extra crunch)
  • 0.5 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon dried Italian herbs (oregano, thyme, basil)
  • 1 large egg, beaten
  • to taste salt and pepper
  • as needed olive oil spray

Instructions

  1. Preheat your air fryer to 400°F (200°C).
  2. In a shallow bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, dried herbs, salt, and pepper. Mix well to combine.
  3. In another bowl, beat the egg until smooth.
  4. Dip each zucchini slice into the beaten egg, ensuring it is well-coated, then dredge it in the breadcrumb mixture, pressing down gently to adhere.
  5. Place the coated zucchini bites in a single layer in the air fryer basket. Lightly spray them with olive oil to enhance crispiness.
  6. Air fry the zucchini bites for about 10-12 minutes or until they are golden brown and crispy, shaking the basket halfway through cooking to ensure even crisping.
  7. Once done, remove them from the air fryer and let them cool slightly before serving.

Serve hot with marinara sauce for dipping and a sprinkle of fresh parsley.
