Air Fryer Zucchini Parmesan Bites Crispy and Delicious
Ingredients
- 2 medium zucchinis, sliced into ½-inch rounds
- 1 cup breadcrumbs (preferably panko for extra crunch)
- 0.5 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon dried Italian herbs (oregano, thyme, basil)
- 1 large egg, beaten

Instructions
- Preheat your air fryer to 400°F (200°C).
- In a shallow bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, dried herbs, salt, and pepper. Mix well to combine.
- In another bowl, beat the egg until smooth.
- Dip each zucchini slice into the beaten egg, ensuring it is well-coated, then dredge it in the breadcrumb mixture, pressing down gently to adhere.
- Place the coated zucchini bites in a single layer in the air fryer basket. Lightly spray them with olive oil to enhance crispiness.
- Air fry the zucchini bites for about 10-12 minutes or until they are golden brown and crispy, shaking the basket halfway through cooking to ensure even crisping.
- Once done, remove them from the air fryer and let them cool slightly before serving.
