Ingredients

  • 1 cup rolled oats
  • 1.5 cups unsweetened almond milk
  • 1 apple diced (preferably Fuji or Honeycrisp)
  • 1 teaspoon ground cinnamon
  • 1 tablespoon maple syrup (optional)
  • 1 tablespoon chia seeds
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Instructions

  1. In a mixing bowl or jar, combine the rolled oats and chia seeds.
  2. Pour in the almond milk, then add diced apple, ground cinnamon, maple syrup (if using), vanilla extract, and a pinch of salt.
  3. Stir all the ingredients together until well combined, ensuring the oats are fully submerged in the liquid.
  4. Cover the bowl or jar with a lid or plastic wrap and refrigerate overnight (or for at least 4 hours) to allow the oats to absorb the liquid and soften.
  5. In the morning, give the oats a good stir. If they are too thick, feel free to add a splash more almond milk to loosen them up.
  6. Divide the overnight oats into two bowls or jars, and top with sliced almonds, additional apple slices, and a sprinkle of cinnamon for extra flavor and texture.

💡 Chef's Notes

Feel free to adjust the sweetness with more or less maple syrup.
