Ingredients
- 2 medium apples, peeled, cored, and diced (Granny Smith work well)
- 1 cup all-purpose flour

- 1 half cup milk
- 1 large egg

Instructions
- In a medium bowl, whisk together the flour, granulated sugar, baking powder, cinnamon, and nutmeg until well combined.
- In a separate bowl, mix together the milk, egg, vanilla extract, and brown sugar until smooth.
- Pour the wet ingredient mixture into the dry ingredients and stir until just combined. Be careful not to overmix; some lumps are okay.
- Gently fold in the diced apples. The batter will be thick and chunky.
- Heat about 2 inches of vegetable oil in a deep skillet or frying pan over medium heat. To test if the oil is ready, drop a small amount of batter into the oil; it should sizzle and float to the surface.
- Using a small cookie scoop or tablespoon, drop rounded spoonfuls of the batter into the hot oil (fry in batches to avoid overcrowding). Cook for about 2-3 minutes on each side or until golden brown.
- Once cooked, use a slotted spoon to remove the fritter bites and place them on paper towels to drain excess oil.
- While still warm, dust the fritter bites with powdered sugar. For added sweetness, consider serving with a drizzle of caramel sauce.
