Ingredients

  • 200 g ramen noodles
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 250 g mixed mushrooms (shiitake, enoki, and button), sliced
  • 4 cups vegetable broth
  • 2 tablespoons soy sauce
  • 1 tablespoon miso paste
  • 1 tablespoon chili paste
  • 1 cup baby spinach
  • 2 green onions chopped
  • 0 to taste black sesame seeds for garnish
  • 0 to taste fresh cilantro for garnish

Instructions

  1. Bring a large pot of salted water to a boil. Add the ramen noodles and cook according to package instructions, usually 3-4 minutes. Drain and set aside.
  2. In a large pot, heat sesame oil over medium heat. Add minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
  3. Add the sliced mixed mushrooms to the pot, and sauté for another 5-7 minutes until they become tender and golden.
  4. Pour in the vegetable broth and bring to a simmer. Stir in the soy sauce, miso paste, and chili paste, mixing well until the miso is fully dissolved. If you prefer spicier ramen, add more chili paste.
  5. Add baby spinach to the broth and let it wilt for about 2-3 minutes.
  6. Add the cooked ramen noodles to the pot and gently mix everything together, allowing the noodles to absorb some of the soup for about 1-2 minutes.
  7. Ladle the ramen into bowls, topping with chopped green onions, black sesame seeds, and fresh cilantro as garnish.
  8. Slurp your noodles and enjoy the comforting flavors of your spicy Asian mushroom ramen!
