Asian Mushroom Ramen Noodles Flavorful and Easy Dish
Ingredients
- 200 g ramen noodles
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 250 g mixed mushrooms (shiitake, enoki, and button), sliced
- 4 cups vegetable broth
- 2 tablespoons soy sauce
- 1 tablespoon miso paste
- 1 tablespoon chili paste
- 1 cup baby spinach
- 2 green onions chopped
- 0 to taste black sesame seeds for garnish
- 0 to taste fresh cilantro for garnish
Instructions
- Bring a large pot of salted water to a boil. Add the ramen noodles and cook according to package instructions, usually 3-4 minutes. Drain and set aside.
- In a large pot, heat sesame oil over medium heat. Add minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
- Add the sliced mixed mushrooms to the pot, and sauté for another 5-7 minutes until they become tender and golden.
- Pour in the vegetable broth and bring to a simmer. Stir in the soy sauce, miso paste, and chili paste, mixing well until the miso is fully dissolved. If you prefer spicier ramen, add more chili paste.
- Add baby spinach to the broth and let it wilt for about 2-3 minutes.
- Add the cooked ramen noodles to the pot and gently mix everything together, allowing the noodles to absorb some of the soup for about 1-2 minutes.
- Ladle the ramen into bowls, topping with chopped green onions, black sesame seeds, and fresh cilantro as garnish.
