Ingredients

  • 2 whole ripe avocados, diced
  • 1 cup fresh sweet corn (or 1 can, drained)
  • 1 medium red bell pepper, diced
  • 1 small red onion, finely chopped
  • 1 whole jalapeño pepper, seeded and minced
  • 0.25 cup fresh cilantro, chopped
  • 2 whole limes, juiced
  • 1 tablespoon olive oil
  • to taste salt and pepper

Instructions

  1. In a mixing bowl, combine the diced avocados, corn, red bell pepper, red onion, jalapeño, and cilantro.
  2. In a small bowl, whisk together the lime juice, olive oil, salt, and pepper.
  3. Pour the dressing over the avocado mixture and gently toss everything together to combine, being careful not to mash the avocados.
  4. Taste and adjust seasoning with more salt, pepper, or lime juice as desired.
  5. Let the salsa sit for about 10 minutes at room temperature to allow the flavors to meld together before serving.
