Avocado Egg Breakfast Cups Simple and Tasty Meal
Ingredients
- 2 whole ripe avocados
- 4 large eggs
- to taste Salt
- to taste Pepper
- 1 tablespoon fresh chives, chopped
- 1 tablespoon feta cheese, crumbled (optional)
- to taste Red chili flakes (optional, for a spicy kick)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a baking tray by lining it with parchment paper or aluminum foil (for easier cleaning).
- Slice each avocado in half and carefully remove the pit. Use a spoon to scoop out a small portion of the flesh to create enough space for an egg.
- Place the avocado halves in a muffin tin to keep them stable while baking. If they don’t fit snugly, you can place crumpled foil around them for support.
- Crack one egg into each avocado half, being careful not to overflow. If the egg whites are too high, use a smaller egg or slightly scoop out more avocado.
- Season each egg and avocado cup with salt and pepper.
- Sprinkle chopped chives and feta cheese over the top of each cup, along with chili flakes if you wish to add heat.
- Bake in the preheated oven for about 15-20 minutes, or until the egg whites are set and the yolks are cooked to your liking.
- Remove from the oven and let cool slightly before serving.
