Ingredients

  • 2 whole ripe avocados
  • 4 large eggs
  • to taste Salt
  • to taste Pepper
  • 1 tablespoon fresh chives, chopped
  • 1 tablespoon feta cheese, crumbled (optional)
  • to taste Red chili flakes (optional, for a spicy kick)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a baking tray by lining it with parchment paper or aluminum foil (for easier cleaning).
  2. Slice each avocado in half and carefully remove the pit. Use a spoon to scoop out a small portion of the flesh to create enough space for an egg.
  3. Place the avocado halves in a muffin tin to keep them stable while baking. If they don’t fit snugly, you can place crumpled foil around them for support.
  4. Crack one egg into each avocado half, being careful not to overflow. If the egg whites are too high, use a smaller egg or slightly scoop out more avocado.
  5. Season each egg and avocado cup with salt and pepper.
  6. Sprinkle chopped chives and feta cheese over the top of each cup, along with chili flakes if you wish to add heat.
  7. Bake in the preheated oven for about 15-20 minutes, or until the egg whites are set and the yolks are cooked to your liking.
  8. Remove from the oven and let cool slightly before serving.
