Bacon Mushroom Swiss Cheese Meatloaf Simple Recipe
Ingredients
- 1 lb ground beef
- 1/2 lb ground pork
- 6 slices bacon, chopped
- 1 cup mushrooms, finely chopped
- 1 medium onion, finely diced
- 2 cloves garlic, minced
- 1 cup breadcrumbs
- 1/2 cup Swiss cheese, grated
- 2 large eggs
- 2 tablespoons Worcestershire sauce
- 1 teaspoon dried thyme
- to taste salt and pepper
- 1/2 cup ketchup (for glazing)
- optional fresh parsley for garnish
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon and drain on paper towels, reserving about a tablespoon of bacon fat in the skillet.
- In the same skillet, add the chopped mushrooms, onion, and garlic, sautéing until soft and all moisture has evaporated. Remove from heat and let cool slightly.
- In a large mixing bowl, combine the ground beef, ground pork, cooked bacon, sautéed mushroom mixture, breadcrumbs, grated Swiss cheese, eggs, Worcestershire sauce, thyme, and season with salt and pepper to taste.
- Mix everything together until just combined – avoid overmixing to keep the meatloaf tender.
- Form the mixture into a loaf shape then place it on a baking sheet lined with parchment paper.
- Spread ketchup generously over the top of the meatloaf to create a glaze.
- Bake in the preheated oven for about 60-70 minutes, or until the internal temperature reaches 160°F (70°C).
- Remove from the oven and let the meatloaf rest for at least 10 minutes before slicing.
- Garnish with fresh parsley if desired before serving.
💡 Chef's Notes
Serve it on a wooden cutting board garnished with extra Swiss cheese shavings and fresh parsley. Pair with mashed potatoes and steamed green beans for a complete meal!
