Ingredients

  • 1 lb ground beef
  • 1/2 lb ground pork
  • 6 slices bacon, chopped
  • 1 cup mushrooms, finely chopped
  • 1 medium onion, finely diced
  • 2 cloves garlic, minced
  • 1 cup breadcrumbs
  • 1/2 cup Swiss cheese, grated
  • 2 large eggs
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • to taste salt and pepper
  • 1/2 cup ketchup (for glazing)
  • optional fresh parsley for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon and drain on paper towels, reserving about a tablespoon of bacon fat in the skillet.
  3. In the same skillet, add the chopped mushrooms, onion, and garlic, sautéing until soft and all moisture has evaporated. Remove from heat and let cool slightly.
  4. In a large mixing bowl, combine the ground beef, ground pork, cooked bacon, sautéed mushroom mixture, breadcrumbs, grated Swiss cheese, eggs, Worcestershire sauce, thyme, and season with salt and pepper to taste.
  5. Mix everything together until just combined – avoid overmixing to keep the meatloaf tender.
  6. Form the mixture into a loaf shape then place it on a baking sheet lined with parchment paper.
  7. Spread ketchup generously over the top of the meatloaf to create a glaze.
  8. Bake in the preheated oven for about 60-70 minutes, or until the internal temperature reaches 160°F (70°C).
  9. Remove from the oven and let the meatloaf rest for at least 10 minutes before slicing.
  10. Garnish with fresh parsley if desired before serving.

💡 Chef's Notes

Serve it on a wooden cutting board garnished with extra Swiss cheese shavings and fresh parsley. Pair with mashed potatoes and steamed green beans for a complete meal!
