Ingredients

  • 1 medium green cabbage, cut into wedges
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1 1/2 teaspoon black pepper
  • 1 1/4 cup grated Parmesan cheese (optional)
  • 1 to taste Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, mix together the olive oil, garlic powder, smoked paprika, dried thyme, salt, and black pepper.
  3. Add the cabbage wedges to the bowl, and toss gently until each wedge is well-coated with the seasoned oil mixture.
  4. Arrange the cabbage wedges on a baking sheet lined with parchment paper, cut sides facing down.
  5. If using, sprinkle Parmesan cheese evenly over the top of the wedges for an extra savory flavor.
  6. Bake in the preheated oven for 25-30 minutes or until the cabbage is golden brown and crispy around the edges.
  7. Remove from the oven and let it cool for a couple of minutes before transferring to a serving platter.

💡 Chef's Notes

Garnish with freshly chopped parsley for a pop of color and serve alongside a dipping sauce like tahini or yogurt for extra flavor.
