Ingredients

  • 2 fillets salmon (6 oz each)
  • 1 bunch asparagus, trimmed
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 lemon zested and juiced
  • to taste salt and pepper
  • 1 teaspoon dried dill (or fresh dill sprigs)
  • 1 teaspoon paprika
  • 1 tablespoon butter, cut into small pieces

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut two large pieces of aluminum foil, approximately 12x18 inches, and place them on a baking sheet.
  3. In a bowl, toss the trimmed asparagus with 1 tablespoon of olive oil, salt, and pepper.
  4. In a small bowl, combine the minced garlic, lemon zest, lemon juice, 1 tablespoon of olive oil, dill, paprika, and a pinch of salt and pepper. This will be your flavorful sauce.
  5. On the center of each piece of foil, place a salmon fillet. Surround it with an equal amount of asparagus.
  6. Drizzle half of the lemon garlic sauce over each salmon fillet and asparagus. Place a few small pieces of butter on top of each fillet.
  7. Fold the edges of the foil over to create a sealed packet. Ensure there is some space inside for the steam to circulate.
  8. Place the foil packets on the baking sheet and bake in the preheated oven for about 20-25 minutes, depending on the thickness of the salmon fillets. The salmon should flake easily with a fork when fully cooked.
  9. Carefully open the foil packets (beware of steam) and transfer the salmon and asparagus to plates. Drizzle any remaining garlic sauce over the top.

💡 Chef's Notes

Serve the salmon and asparagus directly in the open foil, garnished with additional lemon slices and fresh dill for a colorful touch.
