Ingredients
- 2 fillets salmon (about 6 ounces each)
- 1 bunch asparagus, trimmed
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 whole lemon, sliced
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
- to taste salt and pepper
- for garnish fresh parsley, chopped
Instructions
- Preheat your oven to 400°F (200°C).
- Cut two large pieces of aluminum foil, about 12 inches long, and place them on a baking sheet.
- In a bowl, mix together the olive oil, minced garlic, thyme, smoked paprika, salt, and pepper.
- Place the salmon fillets in the center of one piece of foil, skin-side down.
- Arrange the trimmed asparagus around the salmon.
- Drizzle the olive oil mixture evenly over the salmon and asparagus.
- Place lemon slices on top of the salmon and asparagus for added flavor.
- Fold the foil over the salmon and asparagus to create a tightly sealed packet.
- Place the baking sheet in the preheated oven and bake for 15-20 minutes, or until the salmon flakes easily with a fork and the asparagus is tender.
- Carefully remove the baking sheet from the oven and let it sit for a couple of minutes before opening the foil packets (watch out for steam!).
- Garnish with freshly chopped parsley before serving.
💡 Chef's Notes
Serve the salmon and asparagus directly from the foil on a plate for a rustic look, or carefully transfer to a platter. Drizzle any remaining juices from the foil over the top for extra flavor.
