Ingredients

  • 4 fillets salmon (6 oz each)
  • 1 bunch fresh asparagus, trimmed
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 zest lemon
  • 1 lemon sliced
  • 1 teaspoon fresh dill, chopped (or ½ teaspoon dried dill)
  • to taste salt and pepper
  • enough sheets aluminum foil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut four sheets of aluminum foil, each large enough to create a packet for a salmon fillet and asparagus.
  3. In a small bowl, mix together the olive oil, minced garlic, lemon zest, dill, salt, and pepper.
  4. Place one salmon fillet in the center of each piece of foil.
  5. Arrange an equal amount of asparagus spears next to each salmon fillet.
  6. Drizzle the oil and garlic mixture evenly over the salmon and asparagus.
  7. Top each salmon fillet with a slice of lemon.
  8. Fold the sides of the foil over the salmon and asparagus, creating a sealed packet. Ensure it is tightly wrapped to keep the steam inside during baking.
  9. Place the foil packets on a baking sheet and bake in the preheated oven for about 15-20 minutes, or until the salmon easily flakes with a fork and the asparagus is tender.
  10. Carefully unwrap the foil packets (watch out for steam) and serve hot.

💡 Chef's Notes

Serve the salmon and asparagus directly in the foil packets for a rustic look, or transfer to a plate, garnished with extra lemon wedges and dill for a fresh touch.
