Baked Salmon in Foil with Asparagus Fresh and Tasty
Ingredients
- 4 fillets salmon (6 oz each)
- 1 bunch fresh asparagus, trimmed
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 zest lemon
- 1 lemon sliced
- 1 teaspoon fresh dill, chopped (or ½ teaspoon dried dill)

Instructions
- Preheat your oven to 400°F (200°C).
- Cut four sheets of aluminum foil, each large enough to create a packet for a salmon fillet and asparagus.
- In a small bowl, mix together the olive oil, minced garlic, lemon zest, dill, salt, and pepper.
- Place one salmon fillet in the center of each piece of foil.
- Arrange an equal amount of asparagus spears next to each salmon fillet.
- Drizzle the oil and garlic mixture evenly over the salmon and asparagus.
- Top each salmon fillet with a slice of lemon.
- Fold the sides of the foil over the salmon and asparagus, creating a sealed packet. Ensure it is tightly wrapped to keep the steam inside during baking.
- Place the foil packets on a baking sheet and bake in the preheated oven for about 15-20 minutes, or until the salmon easily flakes with a fork and the asparagus is tender.
- Carefully unwrap the foil packets (watch out for steam) and serve hot.

Serve the salmon and asparagus directly in the foil packets for a rustic look, or transfer to a plate, garnished with extra lemon wedges and dill for a fresh touch.
