Ingredients

  • 2 large sweet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon sea salt
  • 0.5 teaspoon smoked paprika
  • 0.5 teaspoon garlic powder
  • to taste fresh herbs (like rosemary or thyme) for optional garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. Wash and peel the sweet potatoes. Using a sharp knife or a mandoline slicer, cut the sweet potatoes into thin, even slices (about 1/8 inch thick).
  3. In a large bowl, toss the sweet potato slices with olive oil, ensuring they are lightly coated. Add sea salt, smoked paprika, and garlic powder, mixing until evenly distributed.
  4. Lay the seasoned sweet potato slices in a single layer on the prepared baking sheets. Make sure the slices are not overlapping to ensure even baking.
  5. Place the baking sheets in the preheated oven. Bake for about 20-25 minutes, checking halfway through to rotate the sheets for even cooking. Keep an eye on them towards the end to prevent burning.
  6. Once the chips are golden and crispy, remove them from the oven and let them cool on the baking sheets for a few minutes. They will continue to crisp up as they cool.
  7. If desired, sprinkle with fresh herbs for added flavor and a fresh look. Serve immediately or store in an airtight container for later.
