Baked Zucchini Fritters Crispy and Delightful Snack
Ingredients
- 2 medium zucchinis, grated
- 1 teaspoon salt
- 1 cup breadcrumbs (panko preferred)
- 1 2 grated Parmesan cheese
- 2 large eggs, beaten
- 1 4 finely chopped green onions
- 2 cloves garlic, minced
- 1 2 onion powder
- 1 2 dried oregano
- 1 4 black pepper
- 1 spray olive oil for baking
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the grated zucchini and salt. Let it sit for about 10 minutes to draw out excess moisture.
- After 10 minutes, use a clean kitchen towel or cheesecloth to squeeze out as much moisture as possible from the zucchini.
- In the same mixing bowl, add the squeezed zucchini, breadcrumbs, Parmesan cheese, beaten eggs, green onions, garlic, onion powder, oregano, and black pepper. Mix until everything is well combined.
- Using your hands, form small patties or fritters with the mixture, about 2-3 inches wide. Place them on the prepared baking sheet.
- Lightly spray the fritters with olive oil spray to help them crisp up in the oven.
- Bake in the preheated oven for about 20-25 minutes, flipping them halfway through, until they are golden brown and crispy on both sides.
- Once done, remove from the oven and let them cool for a few minutes before serving.
