Ingredients

  • 2 medium zucchinis, grated
  • 1 teaspoon salt
  • 1 cup breadcrumbs (panko preferred)
  • 1 2 grated Parmesan cheese
  • 2 large eggs, beaten
  • 1 4 finely chopped green onions
  • 2 cloves garlic, minced
  • 1 2 onion powder
  • 1 2 dried oregano
  • 1 4 black pepper
  • 1 spray olive oil for baking

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the grated zucchini and salt. Let it sit for about 10 minutes to draw out excess moisture.
  3. After 10 minutes, use a clean kitchen towel or cheesecloth to squeeze out as much moisture as possible from the zucchini.
  4. In the same mixing bowl, add the squeezed zucchini, breadcrumbs, Parmesan cheese, beaten eggs, green onions, garlic, onion powder, oregano, and black pepper. Mix until everything is well combined.
  5. Using your hands, form small patties or fritters with the mixture, about 2-3 inches wide. Place them on the prepared baking sheet.
  6. Lightly spray the fritters with olive oil spray to help them crisp up in the oven.
  7. Bake in the preheated oven for about 20-25 minutes, flipping them halfway through, until they are golden brown and crispy on both sides.
  8. Once done, remove from the oven and let them cool for a few minutes before serving.

💡 Chef's Notes

Serve warm with Greek yogurt or tzatziki sauce, garnished with fresh herbs.
