Ingredients
- 1 pound flank steak, thinly sliced
- 1 cup baby spinach leaves
- 0.5 cup roasted red peppers, sliced
- 0.25 cup feta cheese, crumbled
- 0.25 cup balsamic glaze

Instructions
- Prepare the Flank Steak: Lay the thinly sliced flank steak flat on a cutting board and gently pound it with a meat mallet to make it even thinner (about 1/4 inch thick). Season both sides with salt and black pepper.
- Create the Filling: In a bowl, mix together the baby spinach, roasted red peppers, and crumbled feta cheese. This will be the filling for your steak rolls.
- Assemble the Rolls: Take a slice of seasoned flank steak, place about a tablespoon of the spinach mixture on one end, and roll it tightly. Secure the roll with a toothpick or tie with kitchen twine. Repeat this process for all the slices of steak.
- Cook the Rolls: In a large skillet over medium heat, add the olive oil and minced garlic. Once the garlic is fragrant (about 30 seconds), add the steak rolls to the pan. Sear each side for about 3-4 minutes until the steak is cooked to desired doneness.
