Ingredients

  • 1 pound rainbow carrots (or regular carrots), peeled and cut into even sticks
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)
  • to taste salt and pepper
  • optional crumbled feta cheese and chopped parsley for garnish

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.
  2. In a mixing bowl, combine the balsamic vinegar, olive oil, honey (or maple syrup), thyme, salt, and pepper. Whisk until well blended.
  3. Add the carrot sticks to the bowl and toss them in the balsamic mixture until they are all evenly coated.
  4. Spread the carrots in a single layer on the prepared baking sheet, ensuring they are not overcrowded for even roasting.
  5. Roast in the preheated oven for about 25-30 minutes, or until the carrots are tender and caramelized, tossing halfway through to ensure even cooking.
  6. Once done, remove from the oven and let cool slightly.
  7. If desired, sprinkle with crumbled feta cheese and chopped parsley for an added burst of flavor and a beautiful finish.
