Balsamic Roasted Carrots Flavorful and Easy Side Dish
Ingredients
- 1 pound rainbow carrots (or regular carrots), peeled and cut into even sticks
- 3 tablespoons balsamic vinegar
- 2 tablespoons olive oil
- 2 tablespoons honey or maple syrup
- 1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

- optional crumbled feta cheese and chopped parsley for garnish
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.
- In a mixing bowl, combine the balsamic vinegar, olive oil, honey (or maple syrup), thyme, salt, and pepper. Whisk until well blended.
- Add the carrot sticks to the bowl and toss them in the balsamic mixture until they are all evenly coated.
- Spread the carrots in a single layer on the prepared baking sheet, ensuring they are not overcrowded for even roasting.
- Roast in the preheated oven for about 25-30 minutes, or until the carrots are tender and caramelized, tossing halfway through to ensure even cooking.
- Once done, remove from the oven and let cool slightly.
- If desired, sprinkle with crumbled feta cheese and chopped parsley for an added burst of flavor and a beautiful finish.
