Ingredients

  • 1.5 cups graham cracker crumbs
  • 1 cup sugar
  • 0.5 cups unsalted butter, melted
  • 3 packages cream cheese, softened
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 ripe bananas mashed
  • 1 tablespoon lemon juice
  • 1 cup heavy cream
  • 0.25 cups powdered sugar
  • to taste sliced bananas and chocolate shavings for garnish

Instructions

  1. Preheat your oven to 325°F (160°C). In a mixing bowl, combine graham cracker crumbs, 1/3 cup of sugar, and melted butter. Stir until the mixture resembles wet sand. Press this mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then let it cool completely.
  2. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add 1 cup of sugar, continuing to mix until well combined.
  3. Beat in the eggs one at a time, mixing just until incorporated after each addition. Be careful not to overmix. Stir in the vanilla extract, mashed bananas, and lemon juice until the mixture is smooth and creamy.
  4. Pour the filling over the cooled crust. Bake in the preheated oven for 50-60 minutes or until the edges are set and the center is slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually.
  5. Remove the cheesecake from the oven and let it cool to room temperature. Once cool, refrigerate for at least 4 hours or overnight for best results.
  6. Just before serving, beat the heavy cream and powdered sugar in a separate bowl until stiff peaks form.
  7. Spread the whipped cream evenly over the top of the chilled cheesecake. Garnish with sliced bananas and chocolate shavings if desired.
  8. Carefully remove the sides of the springform pan. Slice your Banana Cheesecake Bliss and serve it chilled to experience its full flavor!
