Ingredients

  • 2 ripe bananas
  • 1 cup glutinous rice flour
  • 0.5 cup water
  • 1 tablespoon sugar
  • 1 tablespoon coconut milk (optional)
  • 0 cornstarch for dusting
  • 0.5 cup shredded coconut (for garnish)
  • 0.5 cup sweetened red bean paste (or Nutella)

Instructions

  1. Start by peeling and mashing the ripe bananas in a mixing bowl until smooth.
  2. In another bowl, combine the glutinous rice flour, sugar, and water. Mix well until you have a smooth batter.
  3. Add the mashed bananas and coconut milk to the batter, stirring until everything is well combined.
  4. Pour the mixture into a steaming dish lined with parchment paper or lightly greased.
  5. Steam the mixture over boiling water for about 20-25 minutes, or until the mochi is firm and slightly translucent.
  6. Once cooked, remove the steamed mochi from the heat and let it cool for a few minutes.
  7. Dust your work surface with cornstarch to prevent sticking and transfer the mochi onto it.
  8. Roll out the mochi into a rectangle about ¼ inch thick using a rolling pin, adding more cornstarch as needed.
  9. Spread a thin layer of the sweetened red bean paste (or Nutella) across the middle of the mochi rectangle.
  10. Place a few banana slices on top of the spread, being careful not to overfill.
  11. Roll the mochi tightly from the edge toward the other side, forming a cylinder.
  12. Once rolled, dust the outside of the mochi roll with shredded coconut for added texture and flavor.
  13. Slice the mochi rolls into bite-sized pieces using a sharp knife.

💡 Chef's Notes

Arrange the mochi rolls on a platter and sprinkle with extra shredded coconut. Serve with a drizzle of honey or chocolate sauce for an extra touch!
