Ingredients

  • 4 pieces ripe bananas, sliced
  • 1 cup rolled oats
  • 0.5 cup brown sugar
  • 0.25 cup all-purpose flour
  • 0.5 teaspoon cinnamon
  • 0.25 teaspoon nutmeg
  • 0.5 cup unsalted butter, melted
  • 0.5 cup chopped pecans or walnuts
  • 0.5 cup shredded coconut (optional)
  • to taste scoops vanilla ice cream for serving

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking dish.
  2. In a medium bowl, mix the sliced bananas with half of the brown sugar (1/4 cup) and a sprinkle of cinnamon. Gently toss and set aside to allow the bananas to soften.
  3. In another large bowl, combine the rolled oats, remaining brown sugar, flour, cinnamon, nutmeg, and melted butter. Mix until the mixture is well-combined and crumbly.
  4. Stir in the chopped nuts and shredded coconut, if using.
  5. Spread the banana mixture evenly on the bottom of the prepared baking dish.
  6. Top the bananas with the oat mixture, spreading it out evenly across the top.
  7. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and crispy.
  8. Allow to cool for a few minutes before serving.
  9. Serve warm, topped with a scoop of vanilla ice cream.

💡 Chef's Notes

Optional shredded coconut can be added for extra flavor.
