Ingredients

  • 2 pieces chicken breasts, boneless and skinless
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1 2 cornstarch
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 0.5 teaspoon cayenne pepper
  • to taste salt and pepper
  • as needed vegetable oil for frying
  • 2 pieces sandwich buns (preferably brioche)
  • 1 cup shredded lettuce
  • 1 piece ripe avocado, sliced
  • 0.25 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon lime juice

Instructions

  1. In a bowl, soak the chicken breasts in buttermilk for at least 1 hour, or preferably overnight in the refrigerator.
  2. In a shallow dish, combine the flour, cornstarch, garlic powder, paprika, cayenne pepper, salt, and pepper. Mix well.
  3. Remove the chicken from the buttermilk and allow excess to drip off. Dredge each piece of chicken in the flour mixture, making sure to coat evenly. Shake off any excess flour.
  4. In a deep skillet, heat vegetable oil over medium-high heat until it reaches 350°F (175°C). Carefully place the breaded chicken into the hot oil. Fry for about 5-7 minutes on each side until golden brown and cooked through. Remove from oil and place on a paper towel to drain.
  5. In a small bowl, mix the mayonnaise, sweet chili sauce, and lime juice until well combined. Adjust seasoning or sauce quantities based on preference.
  6. Toast the brioche buns lightly. Spread the Bang Bang sauce generously on both the top and bottom of the bun. Place a piece of fried chicken on the bottom bun, followed by sliced avocado and a handful of shredded lettuce. Close the sandwich with the top bun.
  7. Slice the sandwich in half if desired, and serve with extra Bang Bang sauce on the side for dipping.

💡 Chef's Notes

Adjust the spice level of the cayenne pepper to taste.
