Ingredients

  • 2 large flatbreads
  • 1 cup cooked chicken, shredded
  • 0.5 cup BBQ sauce
  • 1 cup red onion, thinly sliced
  • 1 cup shredded mozzarella cheese
  • 0.5 cup cheddar cheese, shredded
  • 0.25 cup fresh cilantro, chopped
  • 1 small jalapeño, thinly sliced (optional)
  • to taste olive oil for brushing
  • to taste salt and pepper

Instructions

  1. Preheat your oven to 475°F (245°C).
  2. In a bowl, mix the shredded chicken with the BBQ sauce until well coated. Set aside.
  3. Place the flatbreads on a baking sheet lined with parchment paper for easier cleanup.
  4. Lightly brush the top of each flatbread with olive oil to help them crisp up in the oven.
  5. Evenly distribute the BBQ chicken mixture over each flatbread.
  6. Scatter the sliced red onion over the chicken, followed by the mozzarella and cheddar cheese.
  7. If desired, sprinkle thinly sliced jalapeños over the pizza for some extra heat.
  8. Season lightly with salt and pepper, then place the baking sheet in the preheated oven.
  9. Bake for about 10-12 minutes, or until the cheese is melted and bubbly, and the flatbread is crispy.
  10. Once out of the oven, sprinkle fresh cilantro over the top for added flavor and freshness.
  11. Slice each flatbread into wedges, serve hot, and enjoy!
