Ingredients

  • 4 large butter croissants
  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • 1 ripe avocado, sliced
  • 4 slices crispy bacon or turkey bacon
  • 1 small tomato, sliced
  • 1 tablespoon fresh chives, chopped (optional)
  • to taste salt and pepper
  • 1 tablespoon olive oil or butter for cooking

Instructions

  1. Preheat your oven to 350°F (175°C) to warm the croissants later.
  2. In a non-stick skillet, heat 1 tablespoon of olive oil or butter over medium heat.
  3. Crack the eggs into the skillet, season with salt and pepper, and fry to your desired doneness (sunny-side up, over-easy, etc.). Once done, sprinkle half of the cheddar cheese on top of each egg, allowing it to melt slightly from the heat.
  4. While the eggs are cooking, slice the butter croissants in half lengthwise, creating a top and bottom.
  5. Place the bottom halves of the croissants on a baking sheet and layer them with slices of bacon, followed by the cheesy fried eggs.
  6. Top each egg with avocado slices and a few tomato slices. Sprinkle chives on top for an added touch of flavor.
  7. Finish by adding the top halves of the croissants.
  8. Place the assembled sandwiches in the oven for about 5-7 minutes to warm through and slightly toast the tops.
  9. Remove from the oven and serve immediately for a warm and hearty breakfast.

💡 Chef's Notes

Serve the sandwiches cut in half to reveal the beautiful layers inside, and garnish with extra chives or a small side salad for a pop of color on the plate.
