Ingredients
- 4 large butter croissants
- 4 large eggs
- 1 cup shredded cheddar cheese
- 1 ripe avocado, sliced
- 4 slices crispy bacon or turkey bacon
- 1 small tomato, sliced
- 1 tablespoon fresh chives, chopped (optional)
- to taste salt and pepper
- 1 tablespoon olive oil or butter for cooking
Instructions
- Preheat your oven to 350°F (175°C) to warm the croissants later.
- In a non-stick skillet, heat 1 tablespoon of olive oil or butter over medium heat.
- Crack the eggs into the skillet, season with salt and pepper, and fry to your desired doneness (sunny-side up, over-easy, etc.). Once done, sprinkle half of the cheddar cheese on top of each egg, allowing it to melt slightly from the heat.
- While the eggs are cooking, slice the butter croissants in half lengthwise, creating a top and bottom.
- Place the bottom halves of the croissants on a baking sheet and layer them with slices of bacon, followed by the cheesy fried eggs.
- Top each egg with avocado slices and a few tomato slices. Sprinkle chives on top for an added touch of flavor.
- Finish by adding the top halves of the croissants.
- Place the assembled sandwiches in the oven for about 5-7 minutes to warm through and slightly toast the tops.
- Remove from the oven and serve immediately for a warm and hearty breakfast.
💡 Chef's Notes
Serve the sandwiches cut in half to reveal the beautiful layers inside, and garnish with extra chives or a small side salad for a pop of color on the plate.
