Ingredients

  • 2 cups fresh strawberries, hulled and halved
  • 1 cup strawberries, pureed
  • 0.5 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 pre-made pie crust store-bought or homemade
  • 1 serving Whipped cream (for topping)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a saucepan over medium heat, combine the pureed strawberries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Stir well until combined.
  3. Cook the mixture for about 5-7 minutes, continuously stirring, until it thickens and starts to bubble. Remove from the heat and let it cool slightly.
  4. In a mixing bowl, gently toss the halved strawberries with the cooled strawberry mixture until fully coated.
  5. Pour the strawberry filling into the pre-baked pie crust, spreading it evenly.
  6. Bake the pie in the preheated oven for 15-20 minutes or until the crust is golden and the filling starts to bubble.
  7. Remove the pie from the oven and let it cool to room temperature before serving.
  8. Top each slice with a generous dollop of whipped cream just before enjoying.

💡 Chef's Notes

Serve slices on individual dessert plates and drizzle a bit of strawberry sauce over the whipped cream for an extra touch of sweetness and color. Add a sprig of mint for freshness.
