Ingredients

  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned, drained)
  • 1 red bell pepper, finely chopped
  • 0.5 red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 2 tablespoons lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large mixing bowl, combine the black beans, corn, red bell pepper, red onion, and jalapeño.
  2. Add the halved cherry tomatoes and diced avocado to the bowl.
  3. In a separate small bowl, whisk together the lime juice, olive oil, cumin, garlic powder, salt, and pepper.
  4. Pour the dressing over the salsa ingredients in the large bowl.
  5. Gently toss everything together until well combined, being careful not to mash the avocado.
  6. Let the salsa sit for about 15-20 minutes at room temperature to allow the flavors to meld together.
  7. Before serving, taste and adjust seasoning if necessary.
  8. Garnish with freshly chopped cilantro.
