Black Bean Corn Salsa Flavorful and Fresh Delight
Ingredients
- 1 can black beans, drained and rinsed
- 1 cup corn kernels (fresh, frozen, or canned, drained)
- 1 red bell pepper, finely chopped
- 0.5 red onion, finely chopped
- 1 jalapeño, seeded and minced
- 1 cup cherry tomatoes, halved
- 1 avocado, diced
- 2 tablespoons lime juice
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large mixing bowl, combine the black beans, corn, red bell pepper, red onion, and jalapeño.
- Add the halved cherry tomatoes and diced avocado to the bowl.
- In a separate small bowl, whisk together the lime juice, olive oil, cumin, garlic powder, salt, and pepper.
- Pour the dressing over the salsa ingredients in the large bowl.
- Gently toss everything together until well combined, being careful not to mash the avocado.
- Let the salsa sit for about 15-20 minutes at room temperature to allow the flavors to meld together.
- Before serving, taste and adjust seasoning if necessary.
- Garnish with freshly chopped cilantro.
