Ingredients

  • 4 slices sourdough bread
  • 4 ounces brie cheese, sliced
  • 0.5 cup fresh blackberries
  • 2 tablespoons balsamic glaze
  • 2 tablespoons unsalted butter, softened
  • 1 tablespoon fresh thyme leaves (optional)
  • to taste salt and pepper

Instructions

  1. Start by heating a non-stick skillet over medium-low heat.
  2. Spread softened butter on one side of each slice of sourdough bread. This will be the outside of the grilled cheese for a golden finish.
  3. On the non-buttered side of two slices, layer the brie cheese evenly.
  4. Top the brie with blackberries, then drizzle with balsamic glaze. If desired, sprinkle a few fresh thyme leaves for an added aromatic touch. Season with a pinch of salt and pepper to taste.
  5. Place the remaining slices of bread on top, buttered side facing out, creating a sandwich.
  6. Carefully place the sandwiches in the preheated skillet and cook for about 4-5 minutes on each side or until golden brown and the brie is melted. Press down gently with a spatula for even toasting.
  7. Once cooked, remove from skillet and let rest for about 1 minute; this helps the cheese set slightly.
  8. Cut the grilled cheese in half and serve immediately, optionally drizzled with a little extra balsamic glaze for garnish.

💡 Chef's Notes

Serve the sandwiches on a rustic wooden board, cut diagonally, and garnish with additional blackberries and a sprig of thyme for a pop of color.
