Ingredients

  • 4 fillets salmon (6 ounces each)
  • 1 cup fresh spinach, chopped
  • 0.5 cup cream cheese, softened
  • 0.5 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon cayenne pepper
  • to taste salt and black pepper

Instructions

  1. Preheat the oven to 375°F (190°C). Line a baking dish with parchment paper or lightly grease it with cooking spray.
  2. In a skillet over medium heat, add olive oil and minced garlic. Sauté for about 1 minute until fragrant.
  3. Add chopped spinach to the skillet and cook until wilted, approximately 2-3 minutes. Remove from heat.
  4. In a mixing bowl, combine the cooked spinach, softened cream cheese, and grated Parmesan cheese. Season with salt and black pepper to taste. Mix until well combined to create a creamy filling.
  5. Take each salmon fillet and place it skin-side down on a cutting board. Gently slice each fillet horizontally to create a pocket for the filling.
  6. Stuff each salmon fillet with the creamy spinach mixture, dividing it evenly among the fillets. Press the opening closed slightly to secure the filling.
  7. In a small bowl, mix together smoked paprika, cayenne pepper, salt, and black pepper. Rub this spice mixture evenly over each stuffed salmon fillet.
  8. Place the stuffed salmon fillets in the prepared baking dish and bake in the preheated oven for 20-25 minutes, or until the salmon is flaky and cooked through.
  9. Remove from the oven and let rest for a few minutes before serving.
  10. Serve the blackened salmon with lemon wedges on the side for an added zing. Garnish with freshly chopped parsley to enhance the colors and flavors. Pair with a side of roasted vegetables or a light salad for a complete meal.
