Blackened Salmon Stuffed with Spinach & Parmesan Delight
Ingredients
- 4 fillets salmon (6 ounces each)
- 1 cup fresh spinach, chopped
- 0.5 cup cream cheese, softened
- 0.5 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon cayenne pepper

Instructions
- Preheat the oven to 375°F (190°C). Line a baking dish with parchment paper or lightly grease it with cooking spray.
- In a skillet over medium heat, add olive oil and minced garlic. Sauté for about 1 minute until fragrant.
- Add chopped spinach to the skillet and cook until wilted, approximately 2-3 minutes. Remove from heat.
- In a mixing bowl, combine the cooked spinach, softened cream cheese, and grated Parmesan cheese. Season with salt and black pepper to taste. Mix until well combined to create a creamy filling.
- Take each salmon fillet and place it skin-side down on a cutting board. Gently slice each fillet horizontally to create a pocket for the filling.
- Stuff each salmon fillet with the creamy spinach mixture, dividing it evenly among the fillets. Press the opening closed slightly to secure the filling.
- In a small bowl, mix together smoked paprika, cayenne pepper, salt, and black pepper. Rub this spice mixture evenly over each stuffed salmon fillet.
- Place the stuffed salmon fillets in the prepared baking dish and bake in the preheated oven for 20-25 minutes, or until the salmon is flaky and cooked through.
- Remove from the oven and let rest for a few minutes before serving.
- Serve the blackened salmon with lemon wedges on the side for an added zing. Garnish with freshly chopped parsley to enhance the colors and flavors. Pair with a side of roasted vegetables or a light salad for a complete meal.
