Ingredients

  • 2 cups cooked chicken breast, shredded or diced
  • 4 slices crispy bacon, chopped
  • 1 large avocado, diced
  • 1 cup cherry tomatoes, halved
  • 0.5 cup mayonnaise
  • 1 tablespoon lime juice
  • 1 tablespoon Dijon mustard
  • to taste Salt and pepper
  • 1 tablespoon fresh cilantro, chopped (optional)
  • 1 head romaine or butter lettuce, leaves separated

Instructions

  1. In a large mixing bowl, combine the shredded chicken, chopped bacon, diced avocado, and halved cherry tomatoes.
  2. In a separate smaller bowl, whisk together the mayonnaise, lime juice, Dijon mustard, salt, and pepper until smooth.
  3. Pour the dressing over the chicken mixture and gently stir until everything is evenly coated.
  4. If using, fold in the chopped cilantro for an added burst of flavor.
  5. Lay out the individual lettuce leaves on a serving platter.
  6. Spoon an ample amount of the chicken salad mixture onto each lettuce leaf.
  7. Roll the lettuce around the chicken salad like a wrap or fold it over, depending on the size of the leaf.
  8. Arrange the wraps on a plate and serve immediately or chill for 15-20 minutes for a refreshing twist.

💡 Chef's Notes

For a fun presentation, place the filled lettuce wraps upright in a tall jar or serve on a wooden board with lime wedges for garnish.
