Instructions
- Preheat your oven to 350°F (175°C) and grease an 8x8-inch baking pan or line it with parchment paper for easy removal.
- In a medium bowl, gently toss the blueberries with lemon juice, cornstarch, and lemon zest. Set aside to allow the flavors to meld.
- In a large bowl, combine the rolled oats, flour, brown sugar, baking powder, and salt. Pour in the melted butter and vanilla extract, mixing with a spatula until the mixture is crumbly and well combined.
- Press about two-thirds of the crumble mixture evenly into the bottom of the prepared pan to create a base layer.
- Spread the blueberry mixture over the base layer evenly.
- Sprinkle the remaining crumble mixture evenly over the blueberries, ensuring coverage for a nice texture.
- Place the baking pan in the preheated oven and bake for 30-35 minutes or until the top is golden brown and the blueberries are bubbling.
- Once baked, remove from the oven and let cool completely in the pan. After cooling, cut into bars and enjoy!
