Ingredients

  • 2 cups fresh blueberries
  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1.5 cups brown sugar
  • 0.5 cups unsalted butter, melted
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1 zest lemon

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8x8-inch baking pan or line it with parchment paper for easy removal.
  2. In a medium bowl, gently toss the blueberries with lemon juice, cornstarch, and lemon zest. Set aside to allow the flavors to meld.
  3. In a large bowl, combine the rolled oats, flour, brown sugar, baking powder, and salt. Pour in the melted butter and vanilla extract, mixing with a spatula until the mixture is crumbly and well combined.
  4. Press about two-thirds of the crumble mixture evenly into the bottom of the prepared pan to create a base layer.
  5. Spread the blueberry mixture over the base layer evenly.
  6. Sprinkle the remaining crumble mixture evenly over the blueberries, ensuring coverage for a nice texture.
  7. Place the baking pan in the preheated oven and bake for 30-35 minutes or until the top is golden brown and the blueberries are bubbling.
  8. Once baked, remove from the oven and let cool completely in the pan. After cooling, cut into bars and enjoy!
