Blueberry Lemon Yogurt Popsicles Refreshing and Simple
Ingredients
- 2 cups fresh blueberries
- 1 cup plain Greek yogurt
- 0.5 cup honey
- 0.25 cup freshly squeezed lemon juice
- 1 unit lemon zest
- 0.5 teaspoon vanilla extract
- to taste unit mint leaves (optional) for garnish
Instructions
- In a blender, combine the fresh blueberries, Greek yogurt, honey, lemon juice, lemon zest, and vanilla extract. Blend until smooth and creamy.
- Taste the mixture and adjust the sweetness by adding more honey if desired. Blend again briefly if you add honey.
- Pour the mixture into popsicle molds, filling them about 3/4 full to allow for expansion.
- Insert popsicle sticks into each mold and freeze for at least 4-6 hours or until solid.
- To release the popsicles, run warm water over the outside of the molds for a few seconds, then gently pull on the sticks to remove the popsicles.
- If desired, serve garnished with fresh mint leaves for a pop of color and flavor.

Adjust sweetness to taste by adding more honey if desired.
