Ingredients

  • 2 cups fresh blueberries
  • 1 cup plain Greek yogurt
  • 0.5 cup honey
  • 0.25 cup freshly squeezed lemon juice
  • 1 unit lemon zest
  • 0.5 teaspoon vanilla extract
  • to taste unit mint leaves (optional) for garnish

Instructions

  1. In a blender, combine the fresh blueberries, Greek yogurt, honey, lemon juice, lemon zest, and vanilla extract. Blend until smooth and creamy.
  2. Taste the mixture and adjust the sweetness by adding more honey if desired. Blend again briefly if you add honey.
  3. Pour the mixture into popsicle molds, filling them about 3/4 full to allow for expansion.
  4. Insert popsicle sticks into each mold and freeze for at least 4-6 hours or until solid.
  5. To release the popsicles, run warm water over the outside of the molds for a few seconds, then gently pull on the sticks to remove the popsicles.
  6. If desired, serve garnished with fresh mint leaves for a pop of color and flavor.

💡 Chef's Notes

Adjust sweetness to taste by adding more honey if desired.
