Blueberry Oatmeal Bake Wholesome Breakfast Delight
Ingredients
- 2 cups rolled oats
- 1 cup almond milk
- 0.5 cup maple syrup
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 0.5 teaspoon ground cinnamon
- 0.25 teaspoon salt
- 2 cups fresh or frozen blueberries
- 0.25 cup chopped walnuts
- 2 tablespoons coconut oil, melted
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking dish with coconut oil.
- In a large mixing bowl, combine the rolled oats, almond milk, maple syrup, vanilla extract, baking powder, cinnamon, and salt. Stir until well blended.
- Gently fold in the blueberries and chopped walnuts (if using), taking care not to burst the berries.
- Pour the mixture into the prepared baking dish and spread it evenly. Drizzle the melted coconut oil over the top for that extra flavor.
- Bake in the preheated oven for 30-35 minutes, or until the oatmeal is set and slightly golden on top.
- Remove from the oven and let it cool for a few minutes before slicing into squares.
