Ingredients

  • 2 cups rolled oats
  • 1 cup almond milk
  • 0.5 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon salt
  • 2 cups fresh or frozen blueberries
  • 0.25 cup chopped walnuts
  • 2 tablespoons coconut oil, melted

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking dish with coconut oil.
  2. In a large mixing bowl, combine the rolled oats, almond milk, maple syrup, vanilla extract, baking powder, cinnamon, and salt. Stir until well blended.
  3. Gently fold in the blueberries and chopped walnuts (if using), taking care not to burst the berries.
  4. Pour the mixture into the prepared baking dish and spread it evenly. Drizzle the melted coconut oil over the top for that extra flavor.
  5. Bake in the preheated oven for 30-35 minutes, or until the oatmeal is set and slightly golden on top.
  6. Remove from the oven and let it cool for a few minutes before slicing into squares.

Serve warm, topped with Greek yogurt and additional blueberries or walnuts for an appealing finish.
