Ingredients

  • 4 medium-sized potatoes
  • 1 pound ground beef (or meat of your choice)
  • 0.5 cup breadcrumbs
  • 0.25 cup grated Parmesan cheese
  • 1 tablespoon Italian seasoning
  • 1 large egg
  • to taste salt and pepper
  • 2 cups shredded mozzarella cheese
  • 2 tablespoons olive oil
  • 0.5 cup marinara sauce (plus extra for serving)
  • for garnish fresh parsley, chopped

Instructions

  1. Begin by washing and peeling the potatoes. Cut them into quarters, then place them in a pot of salted water. Bring the water to a boil and cook the potatoes for about 15-20 minutes or until they are fork-tender. Drain and let cool slightly before slicing them into thick rounds.
  2. In a large mixing bowl, combine the ground beef, breadcrumbs, Parmesan cheese, Italian seasoning, egg, salt, and pepper. Mix until well combined. Form into small meatballs, about the size of a golf ball (approximately 1 inch in diameter).
  3. Heat the olive oil in a large skillet over medium heat. Add the meatballs and cook for about 8-10 minutes, turning occasionally, until they are browned on all sides and cooked through. Remove from the skillet and set aside.
  4. Preheat your oven to 375°F (190°C). In a baking dish, layer the sliced potatoes evenly on the bottom. Spoon the marinara sauce over the potatoes, spreading it into an even layer. Arrange the cooked meatballs on top of the potatoes and sauce.
  5. Sprinkle the shredded mozzarella cheese generously over the meatballs and potatoes.
  6. Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.
  7. Once baked, remove from the oven and let it cool for a few minutes. Garnish with freshly chopped parsley before serving. Serve warm with extra marinara sauce on the side.
