Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 0.5 cup cocoa powder
  • 1 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon salt
  • 1 cup chocolate chips
  • 0.5 cup heavy cream
  • 0.5 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon coconut oil

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  3. In a separate bowl, sift together the flour, cocoa powder, baking soda, baking powder, and salt. Gradually add the dry mixture to the wet ingredients until combined. Fold in chocolate chips.
  4. Using a tablespoon, scoop dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each mound slightly.
  5. Bake in the preheated oven for 10-12 minutes or until the edges are set but the centers are still soft. Remove from the oven and allow to cool completely on the baking sheet.
  6. In a medium bowl, whip the heavy cream until soft peaks form. Gradually add the powdered sugar and vanilla extract, continuing to whip until stiff peaks form.
  7. Once cookies are cooled, take half of the cookies and spread a generous dollop of the cream filling on the flat side of each. Top with the remaining cookies to form sandwiches.
  8. In a microwave-safe bowl, combine the chocolate chips and coconut oil. Heat in 30-second intervals, stirring until smooth.
  9. Drizzle or dip the assembled cookies in the chocolate glaze, ensuring they're well coated. Place back on the parchment paper to set.
  10. Allow the chocolate glaze to harden completely before serving.
