Ingredients
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs

Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, sift together the flour, cocoa powder, baking soda, baking powder, and salt. Gradually add the dry mixture to the wet ingredients until combined. Fold in chocolate chips.
- Using a tablespoon, scoop dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each mound slightly.

- Once cookies are cooled, take half of the cookies and spread a generous dollop of the cream filling on the flat side of each. Top with the remaining cookies to form sandwiches.
- In a microwave-safe bowl, combine the chocolate chips and coconut oil. Heat in 30-second intervals, stirring until smooth.
- Drizzle or dip the assembled cookies in the chocolate glaze, ensuring they're well coated. Place back on the parchment paper to set.
- Allow the chocolate glaze to harden completely before serving.
