Ingredients

  • 4 fillets salmon (6 oz each)
  • 2 pieces ripe peaches, pitted and sliced
  • 0.25 cup maple syrup
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons Dijon mustard
  • 1 tablespoon soy sauce
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon salt
  • 1 tablespoon olive oil
  • to taste fresh basil leaves (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the maple syrup, apple cider vinegar, Dijon mustard, soy sauce, smoked paprika, black pepper, and salt. Whisk until well blended.
  3. Place the salmon fillets skin-side down on the prepared baking sheet. Brush each fillet generously with the maple glaze.
  4. Arrange the sliced peaches around the salmon on the baking sheet. Drizzle the remaining glaze over the peaches and salmon. Drizzle olive oil over everything.
  5. Roast in the preheated oven for 15-20 minutes, or until the salmon flakes easily with a fork and the peaches are tender and caramelized.
  6. Remove from the oven and let it rest for 2-3 minutes before serving.
  7. Garnish with fresh basil leaves before plating.

💡 Chef's Notes

Serve the salmon on a platter with the roasted peaches arranged aesthetically. Drizzle extra glaze over the top and garnish with additional basil for a pop of color.
