Bourbon Peach Roasted Shrimp: A Flavorful Summer Delight
Ingredients
- 1 lb large shrimp, peeled and deveined
- 2 pieces ripe peaches, pitted and sliced into wedges
- 3 tablespoons bourbon-flavored barbecue sauce (non-alcoholic)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon fresh thyme, chopped (or ½ tsp dried thyme)

Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
- In a large mixing bowl, combine the peeled shrimp and peach wedges.
- In a separate small bowl, whisk together the barbecue sauce, olive oil, minced garlic, smoked paprika, thyme, lime zest, salt, and pepper until well blended.
- Pour the sauce mixture over the shrimp and peaches in the mixing bowl, stirring gently to ensure everything is evenly coated.
- Spread the shrimp and peaches out in a single layer on the prepared baking sheet.
- Roast in the preheated oven for about 12-15 minutes, or until the shrimp are opaque and cooked through, and the peaches are tender.
- Remove from the oven and let them cool for a few minutes. Serve hot, garnished with fresh lime wedges.
