Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 pieces ripe peaches, pitted and sliced into wedges
  • 3 tablespoons bourbon-flavored barbecue sauce (non-alcoholic)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon fresh thyme, chopped (or ½ tsp dried thyme)
  • to taste salt and black pepper
  • 1 zest lime
  • for serving fresh lime wedges

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  2. In a large mixing bowl, combine the peeled shrimp and peach wedges.
  3. In a separate small bowl, whisk together the barbecue sauce, olive oil, minced garlic, smoked paprika, thyme, lime zest, salt, and pepper until well blended.
  4. Pour the sauce mixture over the shrimp and peaches in the mixing bowl, stirring gently to ensure everything is evenly coated.
  5. Spread the shrimp and peaches out in a single layer on the prepared baking sheet.
  6. Roast in the preheated oven for about 12-15 minutes, or until the shrimp are opaque and cooked through, and the peaches are tender.
  7. Remove from the oven and let them cool for a few minutes. Serve hot, garnished with fresh lime wedges.
