Ingredients

  • 0.5 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 0.5 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 0.33 cup unsweetened cocoa powder
  • 0.5 cup all-purpose flour
  • 0.25 teaspoon salt
  • 0.25 teaspoon baking powder
  • 0.5 cup unsalted butter, softened
  • 0.5 cup granulated sugar
  • 0.5 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1.5 cups all-purpose flour
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 1 cup chocolate chips (semi-sweet or milk chocolate)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line an 8x8-inch baking pan with parchment paper for easy removal.
  2. In a bowl, combine melted butter, granulated sugar, and brown sugar. Mix well until the sugars are dissolved. Add in the eggs and vanilla extract; whisk until smooth.
  3. Sift together cocoa powder, flour, salt, and baking powder in a separate bowl. Gradually add the dry mixture to the wet ingredients, stirring until just combined. Do not overmix.
  4. In another bowl, beat softened butter with granulated and brown sugar until creamy. Mix in the egg and vanilla extract until combined.
  5. In a separate bowl, whisk the flour, baking soda, and salt, then slowly add to the wet mixture. Stir until just combined. Fold in the chocolate chips.
  6. Pour the brownie batter into the prepared baking pan, spreading it evenly. On top, spoon the cookie dough by tablespoonfuls, allowing some brownie batter to peek through.
  7. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs (not wet batter).
  8. Allow the brookie to cool in the pan for about 15 minutes before lifting it out using the parchment paper. Cut into squares and enjoy!
