Ingredients
- 0.5 cup unsalted butter, melted
- 1 cup granulated sugar
- 0.5 cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 0.33 cup unsweetened cocoa powder

- 0.5 cup granulated sugar
- 0.5 cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 1.5 cups all-purpose flour
- 0.5 teaspoon baking soda
- 0.25 teaspoon salt
- 1 cup chocolate chips (semi-sweet or milk chocolate)
Instructions
- Preheat the oven to 350°F (175°C). Grease and line an 8x8-inch baking pan with parchment paper for easy removal.
- In a bowl, combine melted butter, granulated sugar, and brown sugar. Mix well until the sugars are dissolved. Add in the eggs and vanilla extract; whisk until smooth.
- Sift together cocoa powder, flour, salt, and baking powder in a separate bowl. Gradually add the dry mixture to the wet ingredients, stirring until just combined. Do not overmix.
- In another bowl, beat softened butter with granulated and brown sugar until creamy. Mix in the egg and vanilla extract until combined.
- In a separate bowl, whisk the flour, baking soda, and salt, then slowly add to the wet mixture. Stir until just combined. Fold in the chocolate chips.
- Pour the brownie batter into the prepared baking pan, spreading it evenly. On top, spoon the cookie dough by tablespoonfuls, allowing some brownie batter to peek through.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs (not wet batter).
- Allow the brookie to cool in the pan for about 15 minutes before lifting it out using the parchment paper. Cut into squares and enjoy!
