Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized cubes
  • 0.25 cup buffalo sauce
  • 0.25 cup ranch dressing, plus extra for dipping
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.5 teaspoon smoked paprika
  • to taste salt and pepper
  • skewers (soaked in water for 30 minutes if wooden)
  • fresh cilantro or parsley for garnish (optional)

Instructions

  1. In a medium bowl, whisk together buffalo sauce, ranch dressing, olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper until well combined.
  2. Add the chicken cubes to the marinade, ensuring each piece is fully coated. Cover and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).
  3. Preheat your grill or grill pan over medium-high heat.
  4. Remove the chicken from the marinade and thread the cubes onto the skewers, leaving some space between each piece for even cooking.
  5. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally until the chicken is cooked through and has grill marks (internal temperature should reach 165°F/74°C).
  6. Once cooked, remove the skewers from the grill and let them rest for a couple of minutes.
  7. Serve the skewers with extra ranch dressing on the side for dipping and garnish with fresh cilantro or parsley for a pop of color.

Soak wooden skewers in water for 30 minutes before use.
