Ingredients

  • 1 large ball burrata cheese
  • 1 French baguette sliced into 1/2-inch thick pieces
  • 1 cup cherry tomatoes, halved
  • 1 4 cup fresh basil leaves, chopped
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon balsamic glaze
  • to taste salt and pepper
  • 1 zest of 1 lemon
  • 1 clove garlic, halved

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Arrange the baguette slices on a baking sheet. Brush one side of each slice with olive oil.
  3. Bake the baguette slices in the preheated oven for about 5-7 minutes, or until golden brown and crispy. Remove from the oven and let cool slightly.
  4. While the bread is still warm, rub the cut side of the garlic clove on the toasted side of the baguette slices for a light garlic flavor.
  5. In a bowl, combine the halved cherry tomatoes, chopped basil, olive oil, lemon zest, salt, and pepper. Toss gently to combine and let sit for 5-10 minutes to allow flavors to meld.
  6. On each toasted baguette slice, add a generous spoonful of the tomato mixture.
  7. Tear the burrata into smaller pieces and place on top of the tomato mixture. Drizzle with balsamic glaze for a touch of sweetness.
  8. Optionally, sprinkle additional salt and freshly cracked pepper over the top for enhanced flavor.
  9. Arrange the bruschetta on a serving platter and enjoy while the bread is still warm.
