Ingredients

  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 medium green bell pepper, diced
  • 1 large carrot, diced
  • 1 lb ground beef or turkey
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups beef or vegetable broth
  • 1 small head cabbage, chopped
  • 2 tablespoons tomato paste
  • 1 tablespoon soy sauce
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon black pepper
  • to taste salt
  • for garnish fresh parsley, chopped

Instructions

  1. In a large pot over medium heat, add a drizzle of olive oil and sauté the diced onion, bell pepper, and carrot until softened, about 5-7 minutes.
  2. Stir in the minced garlic and sauté for an additional minute until fragrant.
  3. Add the ground beef (or turkey) to the pot, breaking it into small pieces. Cook until browned, about 5-7 minutes. Drain any excess fat if necessary.
  4. Mix in the diced tomatoes, tomato paste, soy sauce, Worcestershire sauce, and the beef or vegetable broth.
  5. Bring the mixture to a gentle boil, then add the chopped cabbage and season with oregano, smoked paprika, black pepper, and salt.
  6. Reduce the heat to low, cover the pot, and let it simmer for 30-40 minutes, until the cabbage is tender and flavors meld together.
  7. Taste and adjust seasoning if necessary. If you prefer a bit of heat, feel free to sprinkle in some red pepper flakes.
  8. Serve hot in bowls, garnished with chopped fresh parsley.

💡 Chef's Notes

Feel free to add red pepper flakes for some heat.
