Cabbage Roll Soup Delight: A Comforting One-Pot Meal
Ingredients
- 1 large onion, diced
- 2 cloves garlic, minced
- 1 medium green bell pepper, diced
- 1 large carrot, diced
- 1 lb ground beef or turkey
- 1 can (14.5 oz) diced tomatoes
- 4 cups beef or vegetable broth
- 1 small head cabbage, chopped
- 2 tablespoons tomato paste
- 1 tablespoon soy sauce
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried oregano
- 1 teaspoon smoked paprika
- 0.5 teaspoon black pepper

Instructions
- In a large pot over medium heat, add a drizzle of olive oil and sauté the diced onion, bell pepper, and carrot until softened, about 5-7 minutes.
- Stir in the minced garlic and sauté for an additional minute until fragrant.
- Add the ground beef (or turkey) to the pot, breaking it into small pieces. Cook until browned, about 5-7 minutes. Drain any excess fat if necessary.
- Mix in the diced tomatoes, tomato paste, soy sauce, Worcestershire sauce, and the beef or vegetable broth.
- Bring the mixture to a gentle boil, then add the chopped cabbage and season with oregano, smoked paprika, black pepper, and salt.
- Reduce the heat to low, cover the pot, and let it simmer for 30-40 minutes, until the cabbage is tender and flavors meld together.
- Taste and adjust seasoning if necessary. If you prefer a bit of heat, feel free to sprinkle in some red pepper flakes.
- Serve hot in bowls, garnished with chopped fresh parsley.
