Ingredients

  • 2 pieces boneless, skinless chicken breasts
  • 1 cup smoked sausage, sliced
  • 2 cups fettuccine pasta
  • 1 tablespoon olive oil
  • 1 tablespoon Cajun seasoning
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 2 chicken broth
  • to taste salt and pepper
  • for garnish fresh parsley, chopped

Instructions

  1. Sprinkle the Cajun seasoning evenly over both sides of the chicken breasts. In a large skillet, heat the olive oil over medium heat. Add the seasoned chicken and sauté for 5-7 minutes on each side, until fully cooked and golden brown. Once cooked, remove the chicken from the skillet and set aside to rest.
  2. In the same skillet, add the sliced smoked sausage and cook until browned, about 3-4 minutes. Remove the sausage from the skillet and set aside with the chicken.
  3. In a pot of boiling salted water, cook the fettuccine according to the package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.
  4. In the skillet, add minced garlic and sauté for about 1 minute until fragrant. Pour in the chicken broth and add the heavy cream. Stir until well combined and let the mixture simmer for about 3-4 minutes, allowing it to thicken slightly.
  5. Gradually stir in the grated Parmesan cheese until melted and smooth. Add cooked fettuccine, chicken, and sausage to the sauce, tossing gently until everything is well coated. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
  6. Taste and adjust seasoning with salt and pepper as needed.
  7. Slice the chicken into strips and arrange on top of the pasta. Garnish with fresh parsley for a pop of color.
