Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 2 large tomatoes, sliced
  • 1 cup fresh mozzarella cheese, sliced
  • 1 cup fresh basil leaves
  • 0.25 cup balsamic glaze
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • to taste salt and pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large baking dish, drizzle 1 tablespoon of olive oil over the bottom to prevent sticking.
  3. Season the chicken breasts with garlic powder, Italian seasoning, salt, and pepper on both sides, then place them in the baking dish.
  4. Layer the sliced tomatoes evenly over the chicken breasts.
  5. Next, add the slices of fresh mozzarella cheese on top of the tomatoes.
  6. Drizzle the balsamic glaze generously over the entire dish.
  7. Scatter the fresh basil leaves on top for added flavor and aroma.
  8. Drizzle the remaining tablespoon of olive oil over the top of the chicken and other ingredients for moisture.
  9. Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
  10. After 25 minutes, remove the foil and bake for an additional 10-15 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.
  11. Once done, let the dish rest for a few minutes before serving.
