Caprese Tortellini Pasta Salad: A Refreshing Summer Delight
Ingredients
- 12 oz cheese tortellini
- 1 cup cherry tomatoes, halved
- 1 cup fresh mozzarella balls, halved
- 1 cup fresh basil leaves, chopped
- 0.25 cup balsamic glaze
- 3 tablespoons olive oil
- 1 teaspoon garlic powder

- 0.25 teaspoon red pepper flakes (optional)
Instructions
- Begin by cooking the tortellini according to the package instructions. Once cooked, drain and rinse under cold water to cool.
- In a large mixing bowl, combine the cooled tortellini, halved cherry tomatoes, and fresh mozzarella.
- Add the chopped basil leaves to the bowl.
- In a small bowl, whisk together the balsamic glaze, olive oil, garlic powder, and a pinch of salt and pepper. If you're using red pepper flakes, add them to the dressing.
- Pour the dressing over the tortellini mixture and gently toss everything together until evenly coated.
- Taste and adjust seasoning, adding more salt, pepper, or balsamic glaze as desired.
- Refrigerate the salad for at least 30 minutes to allow the flavors to meld.
