Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 0.5 teaspoon salt
  • 1 cup milk (preferably whole)
  • 1 large egg
  • 2 tablespoons melted butter (plus extra for cooking)
  • 2 ripe bananas, sliced
  • 1 tablespoon brown sugar
  • 1 teaspoon cinnamon
  • to taste Maple syrup, for serving

Instructions

  1. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
  2. In a separate bowl, mix the milk, egg, and melted butter. Pour this wet mixture into the dry ingredients and stir gently until just combined; do not overmix.
  3. Preheat a non-stick skillet or griddle over medium heat. Add a small amount of melted butter to coat the surface.
  4. In the meantime, heat another skillet over medium-low heat and add the sliced bananas. Sprinkle the brown sugar and cinnamon over the bananas. Cook for about 2-3 minutes, or until the bananas are caramelized and slightly softened. Remove from heat and set aside.
  5. Pour 1/4 cup of the pancake batter onto the preheated skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes.
  6. Carefully flip the pancakes and cook for an additional 1-2 minutes, or until golden brown and cooked through. Repeat with remaining batter, adding more butter to the skillet as necessary.
  7. To serve, stack pancakes on a plate, top with caramelized bananas, and drizzle with maple syrup.
