Caramelized Banana Pancakes Irresistibly Fluffy Recipe
Ingredients
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 0.5 teaspoon salt
- 1 cup milk (preferably whole)
- 1 large egg
- 2 tablespoons melted butter (plus extra for cooking)
- 2 ripe bananas, sliced
- 1 tablespoon brown sugar
- 1 teaspoon cinnamon

Instructions
- In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
- In a separate bowl, mix the milk, egg, and melted butter. Pour this wet mixture into the dry ingredients and stir gently until just combined; do not overmix.
- Preheat a non-stick skillet or griddle over medium heat. Add a small amount of melted butter to coat the surface.
- In the meantime, heat another skillet over medium-low heat and add the sliced bananas. Sprinkle the brown sugar and cinnamon over the bananas. Cook for about 2-3 minutes, or until the bananas are caramelized and slightly softened. Remove from heat and set aside.
- Pour 1/4 cup of the pancake batter onto the preheated skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes.
- Carefully flip the pancakes and cook for an additional 1-2 minutes, or until golden brown and cooked through. Repeat with remaining batter, adding more butter to the skillet as necessary.
- To serve, stack pancakes on a plate, top with caramelized bananas, and drizzle with maple syrup.
