Ingredients

  • 8 oz spaghetti or any pasta of choice
  • 1 cup mixed frozen vegetables (carrots, peas, corn, and bell peppers)
  • 1 small onion, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon chili flakes (optional for heat)
  • to taste salt and pepper
  • 0.25 cup grated Parmesan cheese (optional)

Instructions

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Reserve ½ cup of pasta water, then drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and mixed frozen vegetables to the skillet. Cook for another 5-7 minutes until the vegetables are heated through and tender.
  4. Stir in the cooked pasta, adding in reserved pasta water as needed to create a light sauce. Season with oregano, chili flakes, salt, and pepper. Mix well.
  5. Serve warm, topped with grated Parmesan cheese if desired.

Plate the pasta in shallow bowls, garnishing with a sprinkle of extra chili flakes and a drizzle of olive oil for added flair. Consider mixing in a handful of fresh herbs if available for a pop of color and freshness.
