Ingredients
- 8 oz spaghetti or any pasta of choice
- 1 cup mixed frozen vegetables (carrots, peas, corn, and bell peppers)
- 1 small onion, sliced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon chili flakes (optional for heat)

- 0.25 cup grated Parmesan cheese (optional)
Instructions
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Reserve ½ cup of pasta water, then drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the sliced onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and mixed frozen vegetables to the skillet. Cook for another 5-7 minutes until the vegetables are heated through and tender.
- Stir in the cooked pasta, adding in reserved pasta water as needed to create a light sauce. Season with oregano, chili flakes, salt, and pepper. Mix well.
- Serve warm, topped with grated Parmesan cheese if desired.
