Ingredients

  • 1 lb ground beef
  • 1 cup shredded mozzarella cheese
  • 0.5 cup cream cheese, softened
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon Worcestershire sauce
  • 8 large tortillas (flour or whole wheat)
  • 1 cup spinach, lightly chopped
  • 1 teaspoon smoked paprika
  • to taste salt and pepper
  • for cooking olive oil

Instructions

  1. In a large skillet, heat a drizzle of olive oil over medium heat. Add the ground beef, breaking it apart with a spatula, and cook until browned (about 5-7 minutes). Drain excess fat if needed.
  2. In a mixing bowl, combine the cooked ground beef with cream cheese, mozzarella cheese, garlic powder, onion powder, Worcestershire sauce, smoked paprika, salt, and pepper. Mix well until fully combined.
  3. Take a tortilla and lay it flat on a clean surface. Spoon a generous amount of the beef mixture into the center, and sprinkle some chopped spinach on top.
  4. Roll the tortilla tightly from one end, tucking in the sides as you go to secure the filling. Repeat with the remaining tortillas and filling.
  5. In the same skillet, add a bit more olive oil and heat over medium heat. Place the roll-ups seam-side down in the skillet. Cook for 3-4 minutes on each side until golden brown and crispy.
  6. Once browned, remove the roll-ups from the skillet and let them cool slightly before slicing each roll-up into 2-3 pieces.

💡 Chef's Notes

Arrange the roll-ups on a serving platter and garnish with fresh herbs. Serve with a side of marinara sauce or sour cream for dipping.
