Cheesy Dorito Veggie Casserole Flavorful Comfort Dish
Ingredients
- 1 bag Doritos (Nacho Cheese flavor)
- 1 can black beans, rinsed and drained
- 1 cup corn kernels (fresh or frozen)
- 1 medium red bell pepper, diced
- 1 medium yellow onion, diced
- 1 cup cherry tomatoes, halved
- 2 cups shredded cheese (cheddar and mozzarella blend)
- 1 cup sour cream
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- 1 tablespoon taco seasoning
- 0 Salt and pepper to taste
- 0 Fresh cilantro for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, heat a drizzle of olive oil over medium heat. Add the diced onion and bell pepper, sautéing until the vegetables are soft, about 5-7 minutes.
- Stir in the black beans, corn, cherry tomatoes, garlic powder, cumin, and taco seasoning, cooking for an additional 3-4 minutes until everything is heated through. Season with salt and pepper to taste.
- In a large mixing bowl, combine the sautéed veggie mixture with the sour cream and half of the shredded cheese. Mix well until everything is evenly coated.
- In a 9×13-inch baking dish, layer half of the Doritos on the bottom, followed by the veggie mixture, and then top with the remaining Doritos.
- Sprinkle the remaining shredded cheese over the top of the casserole.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and slightly golden.
- Once done, remove from the oven and let it sit for 5 minutes before serving.

Serve hot, garnished with fresh cilantro and a dollop of sour cream on top for an extra touch.
