Ingredients

  • 1 bag Doritos (Nacho Cheese flavor)
  • 1 can black beans, rinsed and drained
  • 1 cup corn kernels (fresh or frozen)
  • 1 medium red bell pepper, diced
  • 1 medium yellow onion, diced
  • 1 cup cherry tomatoes, halved
  • 2 cups shredded cheese (cheddar and mozzarella blend)
  • 1 cup sour cream
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 tablespoon taco seasoning
  • 0 Salt and pepper to taste
  • 0 Fresh cilantro for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat a drizzle of olive oil over medium heat. Add the diced onion and bell pepper, sautéing until the vegetables are soft, about 5-7 minutes.
  3. Stir in the black beans, corn, cherry tomatoes, garlic powder, cumin, and taco seasoning, cooking for an additional 3-4 minutes until everything is heated through. Season with salt and pepper to taste.
  4. In a large mixing bowl, combine the sautéed veggie mixture with the sour cream and half of the shredded cheese. Mix well until everything is evenly coated.
  5. In a 9×13-inch baking dish, layer half of the Doritos on the bottom, followed by the veggie mixture, and then top with the remaining Doritos.
  6. Sprinkle the remaining shredded cheese over the top of the casserole.
  7. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and slightly golden.
  8. Once done, remove from the oven and let it sit for 5 minutes before serving.

💡 Chef's Notes

Serve hot, garnished with fresh cilantro and a dollop of sour cream on top for an extra touch.
