Cheesy French Onion Chicken Savory and Simple Dish
Ingredients
- 4 pieces boneless, skinless chicken breasts
- 2 large onions, thinly sliced
- 3 cloves garlic, minced
- 1 tablespoon brown sugar
- 2 tablespoons olive oil
- 1 teaspoon thyme (fresh or dried)
- 1 cup beef broth (low-sodium)
- 1 cup shredded Gruyère cheese
- 0.5 cup shredded mozzarella cheese
- 1 tablespoon balsamic vinegar

Instructions
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, for 10–15 minutes until they start to soften. Sprinkle with brown sugar and thyme, then continue cooking until the onions are deeply caramelized, about 15 more minutes. Add minced garlic and cook for an additional minute.
- While the onions are caramelizing, season the chicken breasts with salt and pepper.
- In another skillet, heat a tablespoon of olive oil over medium-high heat. Add the chicken breasts and sear for 5–6 minutes on each side until golden brown. Remove from the skillet and set aside.
- In the same pan used to cook the chicken, pour in the beef broth and balsamic vinegar, scraping up any browned bits from the bottom. Bring to a simmer.
- Add the seared chicken breasts back to the skillet with the beef broth. Spoon the caramelized onions over the chicken, ensuring each breast is well-covered.
- Reduce heat to low and sprinkle Gruyère and mozzarella cheese over the chicken. Cover the skillet and let it cook for an additional 5–7 minutes, or until the cheese is melted and bubbly.
- Once done, garnish with freshly chopped parsley and serve immediately.
