Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 8 oz mushrooms, sliced (button or cremini)
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 cup shredded mozzarella cheese
  • 0.5 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • to taste salt and pepper
  • for garnish fresh parsley, chopped

Instructions

  1. Season the chicken breasts on both sides with salt, pepper, and Italian seasoning.
  2. In a large skillet, melt 2 tablespoons of butter over medium-high heat. Add the chicken breasts and cook for about 6-7 minutes on each side, or until they are golden brown and fully cooked. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the remaining 2 tablespoons of butter. Once melted, add the sliced mushrooms and sauté for about 5 minutes until they are tender.
  4. Stir in the minced garlic and cook for an additional minute until fragrant.
  5. Lower the heat and place the chicken back into the skillet. Spoon the mushroom and garlic mixture over the chicken.
  6. Sprinkle the shredded mozzarella and grated Parmesan cheese evenly over the chicken and mushroom mixture. Cover the skillet with a lid and let cook for 3-5 minutes until the cheese is melted and bubbly.
  7. Once the cheese has melted, garnish with fresh chopped parsley before serving.
