Ingredients

  • 2 large chicken breasts, grilled and sliced
  • 1 cup shredded cheddar cheese
  • 1 cup cream cheese, softened
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • to taste salt and pepper
  • 4 large flour tortillas
  • 1 cup fresh spinach leaves
  • 0.5 cup diced tomatoes
  • 0.25 cup fresh cilantro, chopped (optional)
  • for serving sour cream or Greek yogurt

Instructions

  1. In a skillet over medium heat, add olive oil and minced garlic. Sauté for 1-2 minutes until fragrant.
  2. In a mixing bowl, combine the grilled chicken slices, softened cream cheese, shredded cheddar cheese, paprika, salt, and pepper. Mix well until the chicken is coated evenly.
  3. Lay out the flour tortillas on a clean surface. Place a generous portion of the cheesy chicken mixture in the center of each tortilla.
  4. Add a handful of fresh spinach leaves and some diced tomatoes on top of the chicken mixture. If desired, sprinkle some chopped cilantro over the ingredients.
  5. Fold in the sides of the tortilla, then roll from the bottom up to create a wrap.
  6. Preheat a skillet or grill pan over medium-high heat. Add the wrapped tortillas seam side down, and toast for about 2-3 minutes per side until golden and crispy.
  7. Remove the wraps from the skillet and let them cool for a minute before cutting them in half.

Serve with sour cream or Greek yogurt for dipping.
