Ingredients

  • 1 large round loaf sourdough or boule
  • 0.5 cup unsalted butter, melted
  • 4 cloves garlic, minced
  • 1 tablespoon fresh parsley, finely chopped
  • 1 teaspoon dried oregano
  • 0.5 teaspoon red pepper flakes (optional)
  • 2 cups shredded mozzarella cheese
  • 0.5 cup grated Parmesan cheese
  • to taste salt

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, mix the melted butter, minced garlic, chopped parsley, dried oregano, red pepper flakes, and a pinch of salt. Stir until well combined.
  3. Place the loaf of bread on a large piece of aluminum foil.
  4. Using a serrated knife, carefully slice the bread in a crisscross pattern, making deep cuts, but without cutting through the bottom crust. Aim for about 1-inch apart in both directions.
  5. Using a pastry brush or spoon, generously drizzle the garlic butter mixture into the cuts of the bread, ensuring it seeps into each opening.
  6. Sprinkle the shredded mozzarella and Parmesan cheese generously on top and into the cuts of bread.
  7. Wrap the bread tightly in the aluminum foil to keep the cheese melty as it bakes.
  8. Bake in the preheated oven for 15-20 minutes, then remove the foil and bake for an additional 5-10 minutes, or until the cheese is bubbly and golden.
  9. Carefully unwrap the foil and let it cool for a few minutes.
  10. Transfer to a serving plate, garnish with fresh parsley, and pull apart to enjoy!
