Cheesy Mashed Potato Muffins Recipe for Tasty Snack
Ingredients
- 2 cups mashed potatoes (prepared, cooled)
- 1 cup shredded cheddar cheese
- 0.5 cup grated Parmesan cheese
- 0.25 cup milk
- 2 large eggs
- 0.25 cup green onions, finely chopped
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- to taste salt and pepper
- 0.5 teaspoon paprika (optional)

Instructions
- Preheat your oven to 375°F (190°C). Grease a muffin tin with olive oil or cooking spray to prevent sticking.
- In a large mixing bowl, combine the cooled mashed potatoes, shredded cheddar cheese, and grated Parmesan cheese. Stir until well combined.
- Add milk, eggs, green onions, garlic powder, onion powder, salt, and pepper to the mixture. If you like a mild kick, add paprika as well. Mix until smooth and all ingredients are evenly distributed.
- Spoon the potato mixture into the prepared muffin tins, filling each cup about 3/4 full. Smooth the tops for a neater finish.
- Bake in the preheated oven for about 25-30 minutes, or until the tops are golden brown, and a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the tin for 5 minutes before carefully removing them to a wire rack.
