Ingredients

  • 2 cups mashed potatoes (prepared, cooled)
  • 1 cup shredded cheddar cheese
  • 0.5 cup grated Parmesan cheese
  • 0.25 cup milk
  • 2 large eggs
  • 0.25 cup green onions, finely chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt and pepper
  • 0.5 teaspoon paprika (optional)
  • as needed olive oil or cooking spray for greasing the muffin tin

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a muffin tin with olive oil or cooking spray to prevent sticking.
  2. In a large mixing bowl, combine the cooled mashed potatoes, shredded cheddar cheese, and grated Parmesan cheese. Stir until well combined.
  3. Add milk, eggs, green onions, garlic powder, onion powder, salt, and pepper to the mixture. If you like a mild kick, add paprika as well. Mix until smooth and all ingredients are evenly distributed.
  4. Spoon the potato mixture into the prepared muffin tins, filling each cup about 3/4 full. Smooth the tops for a neater finish.
  5. Bake in the preheated oven for about 25-30 minutes, or until the tops are golden brown, and a toothpick inserted into the center comes out clean.
  6. Allow the muffins to cool in the tin for 5 minutes before carefully removing them to a wire rack.
